Ingredients

  • chocolate cake
  • 200 g of butter
  • 4 eggs
  • 200 g of sugar
  • 160 g flour
  • 40 g unsweetened cocoa powder (Van Houten type)
  • 2 teaspoons of yeast (4 g)
  • Coconut Mousse
  • 330 g of mascarpone
  • 180 g sweetened condensed milk
  • 250 g grated fine coconut
  • Deco
  • candy for the decor
  • pink marzipan
  • 100 g of pastry chocolate

Production

Prepare the chocolate cake: Preheat the oven to 200 ° C, thermostat 6. Cut the butter into small pieces and spend a few seconds in the microwave to soften (it should not melt). In the bowl of the pastry mixer or in a bowl with a mixer, mix the softened butter and the sugar and whisk until a homogeneous mixture is obtained.

Add eggs one by one and whisk 1 minute between each egg. Add the flour, cocoa powder and yeast. Mix first with a wooden spoon and whisk again for a minute to homogenize the unit.

Line 2 molds with 18 cm of baking paper and pour half of the preparation into each and smooth slightly to get it out again. Bake and cook for 20 minutes at 200 ° C then lower to 150 ° C (thermostat 5) and cook another 30 minutes. The blade of a knife stuck in the heart of the cake must come out perfectly smooth. When it comes out of the oven, give a good saucepan on the middle of the cakes to flatten the bump and allow to cool for 20 minutes before unmolding.

Prepare the coconut mousse: In the bowl of the food processor or in a salad bowl using a mixer, whisk the mascarpone and the sweetened condensed milk. Once the preparation is well ventilated, stir in half of the grated coconut.

Dress the cake: Cut 2 ears and a bow tie into one of the cakes and arrange the ears around the other cake to form a rabbit's head. Cover with coconut mousse and sprinkle with coconut to form the fur of the rabbit. Then decorate candy and pink almond paste to form eyes, muzzle and teeth.

Cover the bow tie with melted chocolate and quickly decorate Smarties candies before putting the cakes on a serving platter.
